Green garlic sauce with chive oil

Green garlic is very young hardneck garlic that is usually pulled to thin out crops around springtime. It tastes of garlic but it's a little milder and a little grassier, especially around the stem.
  • 150g/6oz green garlic

  • 100g/4oz shallots

  • 1 bay leaf

  • 4 sprigs thyme

  • 150ml/ 1/2 cup dry white wine

  • 30ml/ 2 tbsp white wine vinegar

  • 400ml/ 1 1/2 cup+2 tbsp vegetable stock

  • 300ml/ 1 1/4 cup heavy cream

  • 150g/10 tbsp butter
