Elk with mushroom puree and mushroom demi glace

This mushroom set can be served with any red meat and it will still be tasty. I do recommend using a home made beef stock for the sauce.

Mushroom puree

• 250g/ 8oz crimini mushrooms

• 250g/ 8oz white button mushrooms

• 236 ml/ 1 cup heavy cream

• 2 sprigs thyme
